Add artichokes to water and bring to a boil, once there, reduce heat to simmer. Cook for 25 to 45 minutes (depending on size) or until the outer leaves can easily be pulled off.
Artichokes can also be cooked in a pressure cooker (about 15-20 minutes cooking time). Cooking time depends on how large the artichoke is, the larger, the longer it takes to cook. Also adding a lemon helps keep the color of the artichoke.
Whole Roasted Artichoke
To prepare the artichokes, slice the top third off of the artichoke as well as the stem. Place one artichoke in the middle of one piece of aluminum foil and carefully spread the leaves open with your fingers. Drizzle EVOO in between the leaves with salt, pepper and freshly minced garlic. Squeeze ¼ to ½ lemon juice. Add a tablespoon of water on the foil only (not on the artichoke) and seal it like a dome. Try to leave space between the foil and the top of the artichoke. Cook for 1 ½ hours at 400 degrees.
